Fried Veggie Brown Rice

I was never a big chinese food person when I ate meat, although, I really enjoyed eating shrimp fried rice. This was one of my favorite dishes until I became a vegan. Besides the meat in this dish, the white rice is not good for health because the nutrients have been stripped away through process system.
Rice goes through a variety of processes before it is put on your local grocery stores shelf. After harvesting, the seeds are run through a rice huller/husker for milling to remove the outer grain husks. After this process, you're left with brown rice.
To create white rice, there's added steps. The germ and the inner husk (bran) is removed, the grain is then polished, usually using glucose or talc.

The crazy thing is that these added steps to turn brown rice to white remove nutrients that are sometimes then introduced back in via synthetic sources.
The loss of nutrients is broad and substantial. Plain white rice has far less Vitamin E, Thiamin, Riboflavin, Niacin, Vitamin B6, Folacin, Potassium, Magnesium, Iron and over dozen other nutrients. Added to that, the dietary fiber contained in white rice is around a quarter of brown rice.

So, therefore, brown rice appears to be more healthy and its beneficial to the environment through less processing of a food, the less energy required. There's also the issue of the synthetic vitamins added back in - produced in laboratories and factories from a variety of chemicals; and these sorts of processes are well known for their negative impact on the environment.

If you're used to white rice, making the switch to brown can cause a taste bud rebellion. It's somewhat of an acquired taste for many people. I suggest adding extra sauces and fresh herbs to mask the "wilder" taste of brown rice for a while to allow your tastes to adjust. Once you've acquired a taste for brown rice, it's likely you'll never go back to white. You can almost feel the difference.

Here is my version of Chinese Veggie Fried Rice:

Ingredients:

1 cup brown rice, cooked
1 Tbl garlic, minced
1/2 cup chopped carrots, cubed
1/4 cup chopped yellow onions
1/4 cup green onions, sliced thinly
1/2 cup button mushrooms, sliced
1/4 cup red peppers, chopped
1 cup broccoli florets, chopped
3 Tbl. Tamari/Shoyu sauce
1 Tbl. Agave
2 Tbl. Oil

In a large skillet on low to med heat, add oil and sweat garlic for 1 minute. Then add tamari/shoyu sauce. Turn heat up to med high. Add onions, red peppers and carrots and stir-fry for 5 minutes until onions become translucent. Continue to stir and add agave, mushrooms and broccoli. Continue to stir until broccoli becomes a dark green color. Then add brown rice and green onions. Continue to stir-fry until all ingredients come together. Add sea salt and pepper to taste. Serve.

Optional, add bean sprouts.

Citrus Ginger Dressing: Lite, Good & Tasty!

I have a dressing that I made 8 years ago and I am still using it in most of my salads. This dressing is easy and quick. I always keep ginger root, olive oil, agave or maple syrup and tamari sauce as a staple in my house. These four ingredients are the most used ingredients in my vegetarian meals. Now I get a little more creative and add about a tablespoon of tahini to this dressing. The tahini takes the dressing to another level.
Try it.


Citrus-ginger Dressing

½ cup olive oil
2 tbsp. Shoyu/Tamari sauce
2 tbsp. 100% maple syrup
1 tbsp. fresh ginger, minced
1 fresh tangerine
any citrus fruit, juiced
½ tsp. oregano/basil, dried
Pinch of crushed red pepper

Stir citrus-ginger dressing and add to salad to serve.

Curry Split Pea Soup:Mmm! Mmm! Delicious


Split pea soup is one of my favorite soups and I am a soup lover. I love how it hugs my soul and warms me up in the winter time and soothes me in the summer time. I also love curry spice to take it to another level.
Here is my version of Curry Split Pea Soup:

1 cup dried split peas
2 sprigs of fresh thyme
2 sprigs of fresh rosemary
2 sprigs of fresh sage
1 vegetable boullion cube
5 cloves garlic, chopped
1/2 cup onion, diced
1 tblsp. curry powder
1/8 tsp. cayenne pepper
1 tblsp. vegan/turbinado sugar/Agave
1 carrot, diced
1/4 cup oil
salt & pepper to taste
5 cups vegetable broth

In a stock pot, on low to medium heat, add oil, curry powder, cayenne, garlic, onion, thyme, sage and rosemary Constantly stirring as spices are simmering and sweating. After onions become translucent, add vegetable broth and turn up heat to medium high. Add split peas, carrots and vegetable boullion cube.Cover and boil until peas become soft. Then add sweetner and salt & pepper to taste. To make soup smooth and thick, blend a hand held blender in soup until a thick consistency forms. Enjoy!

Raw Cabbage Salad

Here is another raw recipe for my raw food connoisseurs. This dish is so fresh and delicious.

Ingredients:

1 cup green cabbage, chopped
1 cup red cabbage, chopped
1 cup carrots, shredded
2 thinly sliced red oinion
2 thinly sliced white/yellow onion
1 cucumber, shaved & sliced thinly
1 orange, squeezed
1-2 Tbl. Tamari/Shoyu sauce
1 pinch of cayenne pepper
1 tsp. dried oregano

Combine all ingredients and toss well. Keep in refridgerator for 30 minutes. Serve with a Tahini dressing and enjoy.

Quick & Easy Raw Recipe

I just came up with an easy & quick raw recipe after completing the Master Cleanse aka Lemonade Diet. Which I have to say has done wonders for me. I am guilty of being a starchitarian and gained weight which caused my back to ache horrificly every morning when I get out of bed. After the cleanse, I noticed I do not have any back pain and unnecessary weight just dropped off of me.

I am so thrilled that my back is not hurting. Now, I have to maintain by continuing to consume more raw foods than cooked starchy foods to have a balance. Also, for the New Year maintain an exercise regimen.

This recipe I made is a two in one shot. I am able to have a drink and a meal in one step. The recipe is called Carrot Parsnip Tuna Wrap with Tahini Dressing:

Ingredients:

1 lb. organic carrots(skin peeled)
1/2 lb. organic parsnips(skin peeled)
1 Stalk of Celery, diced
1 Tbl. dulse/kelp
2-3 garlic cloves, minced
1/8 tsp. cayenne pepper(optional)
pinch S&P to taste
1 lemon, freshly squeezed
Nori wraps
Avocado slices
2-4 thin slices of 1 cucumber
sprouts(optional)

Tahini Dressing:

1/2 cup raw Tahini
1 lemon, freshly squeezed
1/4 cup olive oil
1 Tbl. Tamari sauce
Mix all ingredients well with a spoon until smooth and creamy.

In a juicer, add carrots and parsnips and juice. Remove pulp and place in a small mixing bowl. Add celery,dulse/kelp,garlic,cayenne, lemon juice and s&p and mix. Add 1-2 tablespoons of carrot/parsnip juice to mixure for moisture.

Take one sheet of nori, slice into 4 squares. Take 1 square and place a scoopof carrot tuna on sheet and spread. Add cucumber slices, avocado slices and sprouts. Roll nori and repeat the process. Dip rolls into Tahini dressing and enjoy.
