Fried Veggie Brown Rice

I was never a big chinese food person when I ate meat, although, I really enjoyed eating shrimp fried rice. This was one of my favorite dishes until I became a vegan. Besides the meat in this dish, the white rice is not good for health because the nutrients have been stripped away through process system.
Rice goes through a variety of processes before it is put on your local grocery stores shelf. After harvesting, the seeds are run through a rice huller/husker for milling to remove the outer grain husks. After this process, you're left with brown rice.
To create white rice, there's added steps. The germ and the inner husk (bran) is removed, the grain is then polished, usually using glucose or talc.

The crazy thing is that these added steps to turn brown rice to white remove nutrients that are sometimes then introduced back in via synthetic sources.
The loss of nutrients is broad and substantial. Plain white rice has far less Vitamin E, Thiamin, Riboflavin, Niacin, Vitamin B6, Folacin, Potassium, Magnesium, Iron and over dozen other nutrients. Added to that, the dietary fiber contained in white rice is around a quarter of brown rice.

So, therefore, brown rice appears to be more healthy and its beneficial to the environment through less processing of a food, the less energy required. There's also the issue of the synthetic vitamins added back in - produced in laboratories and factories from a variety of chemicals; and these sorts of processes are well known for their negative impact on the environment.

If you're used to white rice, making the switch to brown can cause a taste bud rebellion. It's somewhat of an acquired taste for many people. I suggest adding extra sauces and fresh herbs to mask the "wilder" taste of brown rice for a while to allow your tastes to adjust. Once you've acquired a taste for brown rice, it's likely you'll never go back to white. You can almost feel the difference.

Here is my version of Chinese Veggie Fried Rice:

Ingredients:

1 cup brown rice, cooked
1 Tbl garlic, minced
1/2 cup chopped carrots, cubed
1/4 cup chopped yellow onions
1/4 cup green onions, sliced thinly
1/2 cup button mushrooms, sliced
1/4 cup red peppers, chopped
1 cup broccoli florets, chopped
3 Tbl. Tamari/Shoyu sauce
1 Tbl. Agave
2 Tbl. Oil

In a large skillet on low to med heat, add oil and sweat garlic for 1 minute. Then add tamari/shoyu sauce. Turn heat up to med high. Add onions, red peppers and carrots and stir-fry for 5 minutes until onions become translucent. Continue to stir and add agave, mushrooms and broccoli. Continue to stir until broccoli becomes a dark green color. Then add brown rice and green onions. Continue to stir-fry until all ingredients come together. Add sea salt and pepper to taste. Serve.

Optional, add bean sprouts.

Citrus Ginger Dressing: Lite, Good & Tasty!

I have a dressing that I made 8 years ago and I am still using it in most of my salads. This dressing is easy and quick. I always keep ginger root, olive oil, agave or maple syrup and tamari sauce as a staple in my house. These four ingredients are the most used ingredients in my vegetarian meals. Now I get a little more creative and add about a tablespoon of tahini to this dressing. The tahini takes the dressing to another level.
Try it.


Citrus-ginger Dressing

½ cup olive oil
2 tbsp. Shoyu/Tamari sauce
2 tbsp. 100% maple syrup
1 tbsp. fresh ginger, minced
1 fresh tangerine
any citrus fruit, juiced
½ tsp. oregano/basil, dried
Pinch of crushed red pepper

Stir citrus-ginger dressing and add to salad to serve.

Curry Split Pea Soup:Mmm! Mmm! Delicious


Split pea soup is one of my favorite soups and I am a soup lover. I love how it hugs my soul and warms me up in the winter time and soothes me in the summer time. I also love curry spice to take it to another level.
Here is my version of Curry Split Pea Soup:

1 cup dried split peas
2 sprigs of fresh thyme
2 sprigs of fresh rosemary
2 sprigs of fresh sage
1 vegetable boullion cube
5 cloves garlic, chopped
1/2 cup onion, diced
1 tblsp. curry powder
1/8 tsp. cayenne pepper
1 tblsp. vegan/turbinado sugar/Agave
1 carrot, diced
1/4 cup oil
salt & pepper to taste
5 cups vegetable broth

In a stock pot, on low to medium heat, add oil, curry powder, cayenne, garlic, onion, thyme, sage and rosemary Constantly stirring as spices are simmering and sweating. After onions become translucent, add vegetable broth and turn up heat to medium high. Add split peas, carrots and vegetable boullion cube.Cover and boil until peas become soft. Then add sweetner and salt & pepper to taste. To make soup smooth and thick, blend a hand held blender in soup until a thick consistency forms. Enjoy!

Raw Cabbage Salad

Here is another raw recipe for my raw food connoisseurs. This dish is so fresh and delicious.

Ingredients:

1 cup green cabbage, chopped
1 cup red cabbage, chopped
1 cup carrots, shredded
2 thinly sliced red oinion
2 thinly sliced white/yellow onion
1 cucumber, shaved & sliced thinly
1 orange, squeezed
1-2 Tbl. Tamari/Shoyu sauce
1 pinch of cayenne pepper
1 tsp. dried oregano

Combine all ingredients and toss well. Keep in refridgerator for 30 minutes. Serve with a Tahini dressing and enjoy.

Quick & Easy Raw Recipe

I just came up with an easy & quick raw recipe after completing the Master Cleanse aka Lemonade Diet. Which I have to say has done wonders for me. I am guilty of being a starchitarian and gained weight which caused my back to ache horrificly every morning when I get out of bed. After the cleanse, I noticed I do not have any back pain and unnecessary weight just dropped off of me.

I am so thrilled that my back is not hurting. Now, I have to maintain by continuing to consume more raw foods than cooked starchy foods to have a balance. Also, for the New Year maintain an exercise regimen.

This recipe I made is a two in one shot. I am able to have a drink and a meal in one step. The recipe is called Carrot Parsnip Tuna Wrap with Tahini Dressing:

Ingredients:

1 lb. organic carrots(skin peeled)
1/2 lb. organic parsnips(skin peeled)
1 Stalk of Celery, diced
1 Tbl. dulse/kelp
2-3 garlic cloves, minced
1/8 tsp. cayenne pepper(optional)
pinch S&P to taste
1 lemon, freshly squeezed
Nori wraps
Avocado slices
2-4 thin slices of 1 cucumber
sprouts(optional)

Tahini Dressing:

1/2 cup raw Tahini
1 lemon, freshly squeezed
1/4 cup olive oil
1 Tbl. Tamari sauce
Mix all ingredients well with a spoon until smooth and creamy.

In a juicer, add carrots and parsnips and juice. Remove pulp and place in a small mixing bowl. Add celery,dulse/kelp,garlic,cayenne, lemon juice and s&p and mix. Add 1-2 tablespoons of carrot/parsnip juice to mixure for moisture.

Take one sheet of nori, slice into 4 squares. Take 1 square and place a scoopof carrot tuna on sheet and spread. Add cucumber slices, avocado slices and sprouts. Roll nori and repeat the process. Dip rolls into Tahini dressing and enjoy.

Natural Preventative Measures for Breast Cancer: What They Don't Want Us To Know!

This study revealed a significant link between bras and breast cancer that is three times greater than the link between cigarette smoking and lung cancer! There was a 125 fold increase in breast cancer incidence between women who were bra-free and those who wore bras 24 hours daily. Wearing a bra over 12 hours daily conferred a 113 fold increase in breast cancer incidence!



Bras apply pressure to the breasts, especially to the lymphatic system. The lymphatic system consists of tiny, thin-walled vessels that drain from the breast tissue, removing toxins, cell debris, cancer cells, viruses, bacteria, and other products from the breasts. All of our tissues drain through the lymphatics, which is essentially the circulatory pathway of the immune system. However, unlike arteries and veins, these vessels have no internal pressure. As a result, they are easily compressed by external pressure (a bra, for instance) leading to the congestion of the tissues that would otherwise have been drained. When a woman wears a tight bra, she subjects her breasts to pressure, closing off the lymphatic pathway from the breast to the nodes. However, a bra-constricted breast cannot adequately perform this cleansing process, resulting in toxin accumulation in the breast.

Marinated Raw Collards

1 bundle of organic collards/kale
½ cup extra virgin olive oil
¼ cup *Shoyu/tamari sauce
2-3 tbsp. 100% maple syrup
2-3 cloves garlic, minced
2 tbsp. ginger root, minced
1 tbsp. jalapenos, minced
3-4 thinly sliced yellow onions
3 button mushrooms, sliced

Clean and cut collards very thin.
Pour olive oil onto every piece of collard.
Add all ingredients and mix well.
Chill and marinate for 45 minutes to 1 hour. Serve.

Sweet Potato Gold Mine Muffins

These muffins have a real story to them. It all began 5 years ago when I decided to to be a food vendor at an outdoor festival in Atlanta, GA. I apparently did not know my market as well as I thought I did. Needless to say I was left with a huge debt and 40lbs. of sweet potatoes. I thought it was the worst thing that could ever happen to me.

After the disappointment all that night, the next day came and i had get up and brush myself off and do something with 40lbs. of sweet potatoes, 2 gallons of flour, 4 boxes of tortilla wraps and so on. I began cooking and created sweet potato soup, sweet potato quesadillas, sweet potato biscuits sweet potato pie, sweet potato fries, and then came SWEET POTATO MUFFINS with a Lime glaze. I served lunches and dinners out of my house and the muffins were a smash sweet potato hit. Everyone loved them.

Ever since then I have not given my recipe to no one until now. I am sharing my pride and joy vegan sweet potato muffins with the cooks of the world. ¾ cup spelt four
2 tsp. Baking powder (aluminum free)
4 tbs. Turbinado sugar
1 pinch of sea salt
1 tsp. Cinnamon
1/2 tsp. Nutmeg
½ cup Almond vanilla milk
1/4 cup safflower oil
1/8 tsp. vanilla extract
½ cup sweet potato(cooked, peeled & smashed)
1/2 cup golden raisins

Lime glaze

½ cup organic powdered sugar
1 tbl. Fresh lime glaze

Boil sweet potato until completely soft . Let cool and peel. In small bowl, smash with fork. In a large bowl, combine all dry ingredients and mix well. In another large bowl, combine wet ingredients except raisins and mix well. Combine wet and dry ingredients and mix well. Add raisins to batter and mix. Rub oil all throughout muffin cups and add batter mix to each muffin cup. Bake in oven for 25-35 minutes until golden brown. Take out of oven and let muffins cool down for 5 minutes. Take muffins out of pan and let cool for 15-20 minutes. Spread glaze on each muffin and serve.

Lime Glaze

In small bowl, add powdered sugar & lime juice. Stir until smooth.

Hot Buffalo Tofu Wangs Recipe




1 cup spelt flour
1 tbsp. oregano
1 tsp. granulated garlic
1 Ib. tofu, cut into triangles
1 cup safflower oil/vegetable oil
1 cup red hot sauce (your choice of lowest sodium)
1 cup Earth Balance Butter 1-2 tbsp. turbinado sugar
1 tbsp. dried minced onion 1 clove garlic, minced

Preheat oven at 350 degrees.

Add granulated garlic and oregano to spelt flour. Coat the tofu with seasoned flour. Heat oil in skillet and add tofu. Cook tofu until golden brown on all sides. Drain on paper towel.
Heat hot sauce in a saucepan. Add butter, sugar, garlic, and minced onion. Simmer until bubbles form. Pour sauce over tofu in a casserole dish, cover and place in oven for 10-15 minutes. Serve.


Serves: 3-4
Meal Time: 15-25 minutes

5-8 tomato slices
4-5 avocado slices
1 ½ cup safflower oil
¼ cup shaved carrots
1 Ib mixed field greens
½ tsp granulated garlic
1-2 tbsp 100% maple syrup
1 tbsp Earth Balance Butter
1 tbsp. turbinado sugar/ raw sugar
¼ cup red onions, sliced thinly
2 tbsp chopped fresh cilantro

Citrus-ginger Dressing

½ cup olive oil
2 tbsp. Shoyu sauce
2 tbsp. 100% maple syrup
1 tbsp. fresh ginger, minced
1 fresh tangerine
any citrus fruit, juiced
½ tsp. oregano/basil, dried

Cut tofu into cubes. Add oregano and garlic to flour. Coat tofu with seasoned flour. Heat oil in skillet and add coated tofu to hot oil. Cook until all sides are golden brown. Drain.Heat another skillet with butter. Add maple syrup and tofu and stir until tofu becomes a brown caramel color.

Repeat #3 process, but add pecans and sugar in place of tofu. Set aside and cool. Layer mixed greens, tofu, pecans, tomatoes, onions, avocados, carrots and cilantro. Stir citrus-ginger dressing and add to salad to serve.

Raw Food and Vegan Recipes

Nutritionist and fitness experts say that going on vegan diet can be a healthy choice. Others would say it's an exaggerated version of a nutritional diet and risky to embrace because the human body scientifically requires not just fiber and good carbohydrates but also high protein which vegetables have a little amount of. Not all can tolerate eating raw food and vegan recipes in every single meal. But those who can manage such diet plan are expectedly lean and fat-free. Certain dishes that fuse veggies and root crops together can be costly at times, which is why all-veggie diet isn't a preferred diet among majority of individuals.
Good nutrition always comes with raw food and vegan recipes, balanced protein and carbohydrates. Yoga followers are on vegetable diet, which is why most of those who practice it appear to be skinny or slim. Organic food may be good source of fiber that our body highly requires but it doesn't accelerate the development of muscles. If you are muscle builder, vegetables are not good to eat alone. You have to integrate some considerable amount of protein that contains all the amino acids you need for muscle building. Vegans usually go for foods like apples, beets, carrots, raw grains, oats, rye, sesame seeds, almonds, oranges, pumpkins, tomatoes, asparagus, broccoli, red peppers, spinach, buckwheat, pomegranate, cabbages, etc. Eating green salads without any meat content is strictly vegan but if you put in some chicken breasts or bacon strips in it, that's deemed to be semi-vegan.
Fruits and vegetables are recognized to be good sources of vitamins and minerals, aside from fiber, good carbohydrates and antioxidants. Raw food and vegan recipes are usually broiled or boiled, not fried or mixed preservatives or additives. But being a vegan does not necessarily mean that you do not have a craving for the occasional sweet. Make your own vegan cake recipe by substituting animal products and using some creative ingenuity.
In most cake recipes the egg acts as a leavening agent. This means that the egg causes a foaming action that allows bubbles to form within the batter. Ultimately this will lighten and soften the cake. In other dishes which call for eggs the egg may serve another purpose. Such as cookies use eggs as a binding element. For cakes there are a variety of egg substitutes sold at health food stores. For a vegan cake recipe check to be sure that the substitute you choose is animal product free.
Commercial substitutes are not the only option. Bananas and applesauce are used in a variety of sweets as an egg substitute. Both add moisture and will work as a binding agent but since they do not trap air bubbles in a vegan cake batter they will not make the end product light and fluffy. Ingredients

• ½ cup softened vegan margarine
• 1 cup sugar
• egg substitute for four eggs
• 1 3/8 cup flour
• ½ tsp baking powder
• soy or almond milk to moisten batter

Preheat oven to 325 degrees and have a greased eight inch pan ready. Cream vegan margarine and gradually add sugar and egg substitute. Add dry ingredients and soy milk to moisten. Bake for 30 to 40 minutes.
